Native to western Asia, the olive tree is a plant with an ancient history linked to the one of humanity, not only regarding nutrition and many other practical uses, but also for cultural and spiritual aspects. The Extra Virgin Olive Oil (EVO) is obtained from the first cold-pressing of the olives (drupe). Chemical means, commonly used for the extraction of other oils, are completely excluded. The resulting product must not exceed 0.8% acidity in order to be considered “extra virgin”.
